to new seasonal dishes, it's no secret that we've always taken great inspiration from the world around us. After all, the island life couldn't exist without it—and our restaurants and bars wouldn't be the slices of paradise they are without the resources and inspiration cultivated from the earth.
In honor of Earth Day this month, we're shining the spotlight on farm-to-table dining at three Tommy Bahama restaurants & bars and taking a closer look at the local partners and ingredients that help create the fresh island-inspired dishes we're known for.
TOMMY BAHAMA MAUNA LANI RESTAURANT, BAR & STORE
- HIRAYAMA FARMS, KAMUELA, HI
On the tropical paradise that is the island of Hawai'i, just 20 minutes from our Mauna Lani location, Hirayama Farms—and its neighboring farms—provide fresh, local produce, focusing mainly on romaine, cabbage, and other lettuces. A family affair, the farm has been passed down for three generations—and shows no sign of stopping anytime soon.
It's not just the produce that's sourced locally, though. The Hawaiian Islands are a lush and varied landscape that offers a bounty of fresh ingredients. From macadamia nuts and coffee to sugarcane to beef from local cattle ranches, these components are what make up the unmistakable taste of the islands.

TOMMY BAHAMA PALM DESERT RESTAURANT, BAR & STORE
- BABÉ FARMS, SANTA MARIA, CA
Apart from sunshine, coastline, and good vibes, California is known for its fresh produce—and leafy, mixed greens are part of its culinary DNA.
Family-owned and operated since 1986, Babé Farms is a pioneer in the specialty-vegetable field. They've grown mesclun greens and sold them as packaged salad mixes for decades, before the produce-aisle staple became commonplace in the US. Supplying our Palm Desert restaurant (and
Newport Beach,
too!) with crisp, buttery baby gem romaine, the farm has been a proud partner and constant inspiration of ours for many years.

TOMMY BAHAMA LAS VEGAS MARLIN BAR
- STRAUS FAMILY CREAMERY, SONOMA COUNTY, CA
A great dessert is an important part of any menu, and at Tommy Bahama, we take dessert seriously. It may be located in “Sin City,” but our Las Vegas Marlin Bar serves an angelic organic vanilla soft serve from Straus Family Creamery that perfectly rounds out any meal.
Beginning in 1994 with the founder's family dairy farm, it's been all about family from the start. The Sonoma County creamery sources its milk from 12 certified organic family dairy farms in Marin and Sonoma Counties. Located north of San Francisco, the area is known for its mild climate, sweet grasses, and fresh, coastal air, making it the perfect place for cows to graze—and resulting in milk that's just right for a sweet treat.
If the glitz and glam of Las Vegas isn't your thing, you can also find Straus Creamery's organic vanilla soft serve on the dessert menu at our
Palm Springs Marlin Bar.
From beef to greens to organic ice cream, it's the fresh kitchen staples from established family farms like these that are at the heart of dining at Tommy Bahama. Because we believe it's important not just to know where your food comes from but who your food comes from.
